הוראות הכנה:

  1. נערבב ונלוש היטב את מרכיבי הבצק, ניתן להוסיף מעט קמח או מים עד לקבלת בצק יחסית יבש שאינו נדבק ונוח לעבודה.

  2. ניצור "נקניקים" דקים מהבצק ונחתוך לכדורים קטנים בערך בגודל של חומוס, ניתן לעצב לכל צורה שאוהבים. אני מוללתי בין האצבעות ליצירת צורת במבה. נעביר לתבנית עם נייר אפייה, נכסה בניילון נצמד וניתן לנוקידס להתייבש לפחות יממה.

  3. בסיר גדול שניתן להכניס לתנור ניצוק רבע כוס שמן זית, את הבצל, ראש הסלרי והשום ונטגן כמה דק' עד שיתחיל להזהיב.

  4. נוסיף פנימה את הפפריקה המתוקה והחריפה ונטגן עוד 20 שניות. נוסיף גם את רסק העגבניות ואת העגבניות המגורדות + חצי כוס מים ונבשל על אש קטנה עם מכסה כרבע שעה תוך ערבוב מידי פעם.

  5. ניצוק לסיר כליטר וחצי מים ואת שאר מרכיבי התיבול, נתקן מלח ופלפל ונביא לרתיחה.

  6. נכניס את הנוקידסים היבשים ואת נתחי העוף והקציצות (מומלץ לטגן מעט את הקציצות על מחבת לפני שמכניסים לרוטב כדי שלא יתפרקו בבישול הארוך).

  7. מבשלים כחצי שעה על הגז ומעבירים ללילה בתנור על 130 מעלות.

  8. כשמוציאים מהתנור מגרדים בזהירות את תחתית הסיר שנדבקה עם כף גדולה ובעדינות רבה כדי לא לפגוע בנוקידסים.
